Coconut Lime Chicken with Chiles With A Twist Of Curry Over Rice
Ingredients
1 lb boneless - skinless chicken breasts or you can use thigh meat …cut into cubes
3 cloves garlic minced
Salt and Pepper
Juice from 1 lime
2 tsp curry powder ( I love using hot curry powder)
1 14 oz can coconut milk
1 4 oz. can diced green chiles
1/4 cup green onion, chopped
2 tbsp fresh cilantro, chopped
Oil
Rice
Directions
( Make sure y’all are cooking the rice before starting the chicken
)
1) Heat up oil in a pan
2) Cut the lime and add half the lime juice and chicken and garlic into the hot pan
3) Cook until chicken is brown like the picture below
4) Add Curry Powder and stir for a minute
5) Add Milk, chiles and stir – bring to a simmer and let simmer for 5 more minutes.
6) Stir in the onions and cilantro
7) Serve over rice and enjoy

I can’t wait to try this recipe. When you say “green chiles” which ones do you mean? There’s jalapenos, serrano, poblano, etc.

Looks great! Do you add the other 1/2 of the lime juice at some point? Or is it just the 1/2 at the beginning?
