Today’s recipe is full of flavor. When I tasted it for the first time my knees went a little wobbly – I am not kidding. Plus I love the fact that I was able to sneak in my favorite fruit pineapples. This is a perfect snack for the Big Game on Sunday. You can cook the pineapple and chicken in advance
What You Need ( Below is enough for 4 Quesadillas)
- 8 whole Flour Tortillas
- 2 Tablespoon Margarine
- 1 cups Grilled Pineapple Cubes
- 1.5 Pounds Skinless Chicken Breasts
- Salt And Pepper, to taste
- 3 cups Cheddar and Monterrey Jack Cheese
- 1 whole Jalapeno, Sliced – Seeded
- 1 tablespoon of finely chopped Cilantro
- 3 Tablespoons Barbecue Sauce
What To Do
Cook Chicken – Heat up 1 tablespoon of Margarine in a pan. I used salt and pepper plus some other spices — it is really up to you about how you season the chicken.
then I cut them into strips
Here are some of the chicken strips
Place tortilla on top then place it back in the pan to melt the cheese.
Cut into 6 sections and Enjoy!
You can make this recipe GLUTEN FREE by using corn tortillas ( which is what I did
)

- Cook Chicken and cut into small strips
- Cook Pineapple
- Place each tortillas into a heated pan ( you want to warm them up)
- Next add cheese, pinch of Cilantro, sprinkle of Jalapeno, Pineapple, Chicken; BBQ Sauce ( a little goes a LONG way).
- Place tortilla on top then place it back in the pan to melt the cheese.
- Cut into 6 sections and Enjoy!

I never would have thought to add bbq sauce to a quesadilla! I hope these are as good as they sound!
