What You Need
2 Cups of Blueberries ( fresh or frozen ( thawed) )
1 Cup of Water
1/2 Cup of Sugar
1/4 Lemon – zest and juice
You can use the syrup on Pancakes
What To Do
Place water and berries into a stockpot over medium heat. Use a potato masher and mash the berries.
Once the mixture starts to boil – lower heat and simmer for 15 minutes. Stir every 5 minutes.
Strain the mixture.
Discard the berries or use them as a topping ( mix in a little sugar to cut that tart taste)
Place drained juice mixture back into the pot.
Add sugar and lemon.
Stir and simmer for about 15 minutes or until semi – thick.
It should nicely coat the back of a spoon.
Enjoy!
