The inspiration of this recipe came from the fact I really want to try and do some “different” but flavorful side dish for Fall

The idea for the sweet potato casserole recipe came about when I was taking a Fall walk ( here in Oregon all the leaves are changing color)

This is the tree that inspired me πŸ™‚

I wanted to make a comforting dish that had many layers ( so I thought a perfect idea would be a sweet potato casserole) with a pecan brown sugar topping

Different flavors mixed with different textures equals a beautiful dish just like the different colored leaves creates a beautiful picture

The leaves you see in the “finished product picture” above are from this tree πŸ™‚

I decided to use white sweet potatoes since they tend to be not overly sweet which pairs well with the brown sugar pecan topping

This dish could easily be made gluten – free by using gluten – free flour

You could make this dish in a 9×13 casserole dish but I opted for an 8×8 casserole dish – I love thicker casseroles ( am I the only one?)

My family ( who tries all my recipes) could not get enough of this. It is already slated to be on the Thanksgiving menu !!!

Sweet Potato Casserole

:

Ingredients

  • 4 cups of white sweet potatoes
  • ½ cup of white sugar
  • 2 Eggs - whisked
  • ½ Cup of Milk
  • 4 Tablespoons of Butter, Melted
  • ½ Cup of brown Sugar
  • ½ Cup of Pecan Pieces
  • 1 tsp of vanilla extract
  • ⅓ Cup of Flour
  • ¼ tsp of salt
  • 3 tablespoons of butter - cold

Instructions

  1. Preheat oven to 325
  2. Cook sweet potatoes in hot water - depending on the size of the sweet potato chunks the timing will be individual
  3. Drain and Mash potatoes
  4. In a large bowl, mix: potatoes, white sugar, eggs, salt, butter, milk, and vanilla
  5. Pour into casserole dish
  6. In a small bowl mix: brown sugar, flour, and butter - use your hands to mix together - should be crumbly.
  7. Sprinkle brown sugar on top of the sweet potato mix
  8. Sprinkle pecans on top
  9. Bake for 30 minutes
  10. Enjoy
