One Pot Cheesy Pasta Recipe

I think I am really pushing Fall in my house — well in terms of food — I notice I am tending more towards a casserole rather than a nice BIG salad — which is what I normally eat during the summer

Fall to me is all about casseroles — not only they are easy to make but the leftovers

Growing up my family was huge about leftovers – and I love them to this day. Do not get me wrong I LOVE cooking — but the thought of not cooking because of leftovers makes me so happy

I think the main reason I love it so much is that I do not need to clean my kitchen – I tend to make a mess whenever I enter a kitchen —- so I hate to cook when I just spend 2 hours cleaning it 😉

I added a BUNCH of basil to this dish — main reason is that my basil plant is producing TONS of basil — my little basil plant that I grew from seeds – though I am hitting the problem that the plant is getting too big for its pot BUT the pot is a cute figurine planter that I cannot get the plant out of — these are the type of problems that plague my mind ( silly I know)

I made this recipe gluten free so I could enjoy it too 🙂 But you can use regular pasta if you would like 🙂

I also added some sausage to add an extra kick of protein to the dish – we are going through a HUGE Chicken sausage phase in my house — I cook with it at least 4 times a week

I ended up place the pan in the oven to melt the cheese — you do not have to do this step either — make this recipe work for you best 🙂

One Pot Cheesy Pasta Recipe

:

Ingredients

  • 1 Tablespoon of Olive Oil
  • 2 Sausage Links - Sliced
  • 1 tsp of Garlic Powder
  • ½ Tsp of red pepper flakes
  • ½ Cup of Basil Leaves
  • Pinch of Salt and Pepper
  • ½ Cup of Parmesan Cheese, shredded
  • 2 Cup of Mozzarella Cheese, shredded
  • 28 Oz of Pasta Sauce ( your favorite type)
  • 12 ounces penne pasta
  • ½ Cup of Milk

Instructions

  1. In your skillet - add oil and sausage - cook over medium heat - cook for 3 - 5 minutes - add all these seasoning - salt, pepper, red pepper flakes, and garlic powder
  2. Add pasta sauce - stir for a couple of minutes
  3. Add Pasta ( uncooked) plus 2.5 cups of water - bring to boil then reduce heat to a simmer
  4. Cover and cook for 20 minutes
  5. Stir in milk and ½ cup of basil
  6. Cover the pasta with parmesan and mozzarella cheese - either bake at 350 for 10 minutes to melt the cheese OR simply cover the skillet again for 5 - 10 minutes
  7. Enjoy
