Boy this soup has it all – I will say this is one of my few dishes that I make and when I taste it – it really tastes like it is a from a restaurant

The secret ingredient is cumin – it adds so much depth of flavor and a bit of heat

Also the chicken has a great sear on it – so it lovely in the soup – I love to shred chicken in a soup because the stock of the soup soaks up in the chicken — sigh…. I could eat endless bowls of this soup

Also it is gluten and dairy free which is awesome for families with allergies

You could make this recipe easily in the crock pot – simply have the crock pot on low – place all the ingredients in the crock pot ( 5 quart crock pot is ideal) – cook everything for about 6 hours – the longer you cook the more lovely the flavors will become

Did I also mention that this recipe is extremely frugal 🙂 LOVE LOVE LOVE

I used fresh parsley in this soup – next time I would suggest cilantro – they are both in the same family so use what type you would like

I love the fact I almost had everything on hand in the pantry

The BEST Chicken Soup Ever Recipe

Ingredients

  • 30 Ounces of Chicken Broth
  • 2 Pounds of Chicken - Cooked - I sear my chicken then finish in the oven then shred
  • 15 ounces of Black Beans - Washed and Drained
  • 10 Ounces of diced Tomatoes with Green Chiles, drained
  • 1 Can of Corn - Drained
  • 1 Tablespoon of Finely Chopped Parsley
  • ½ tsp of paprika
  • ¼ tsp of cumin
  • ½ tsp of salt
  • ½ tsp of pepper

Instructions

  1. You can use left over chicken OR you can cook the chicken for the soup - needs to be 2 pounds
  2. In a large stock pot - add all the ingredients together
  3. Cover and set to low/medium and cook for 40 minutes
  4. Enjoy
