My newest obsession is one pot dishes – I think it is mainly because it is a crazy time ( holidays ) and I just want to make a yummy dinner really fast and really good

Dinner Time During The Holidays = Headache Time

What I like so much about this dish is that it is a little bit spicy – it has red pepper flakes in it

But it is also tart with the lemon zest and juice but then it has a wonderful cheesiness ( which is the BEST THING EVER)

To make this dish a little healthier simply use whole grain pasta

If you want to make this dish gluten free simply use gluten free pasta

One Pan Cheesy Lemon Chicken Pasta Recipe

So there is no enchilada sauce in this recipe – my dad is at it again —- we were in the middle of making the recipe and realized that there was still a can of red enchilada sauce sitting in front of the toaster – so it was too late to reshoot the picture

You can use fresh basil – but it is pretty expensive this time of year so I am using dried

One Pan Cheesy Lemon Chicken Pasta Recipe

Ingredients

  • 1 pound chicken breasts
  • 2 Tbsp olive oil
  • ½ cup diced yellow onion
  • 1 Tbsp minced garlic
  • 8 oz (about 2½ cups) small, dry pasta
  • 1 cup grape tomatoes, halved
  • 2 cups chicken broth
  • zest and Juice from one lemon
  • 1 cup water
  • 1 tsp dried basil
  • 1 tsp salt
  • Pinch of Cayenne Pepper
  • ¼ tsp red pepper flakes
  • ¼ tsp pepper
  • 1 cup shredded Mozzerella

Instructions

  1. In a VERY large skillet - heat oil and add onions and garlic
  2. Add chicken - make sure it is cut into strips or cubed ( you choose)
  3. Cook the chicken -Once cooked add uncooked pasta
  4. Add tomatoes, chicken broth, lemon zest and juice, water, basil, cayenne, red pepper flakes, salt and pepper
  5. Bring to a boil - lower heat and cover - cook for 15 minutes and check
  6. Stir and cover - cook for another 10 minutes
  7. If the pasta is cooked great if not - keep uncovered and cook till pasta is soft
  8. Add cheese and cover till melted
  9. Enjoy
