Tie Dye Poke Cake

As you know milk has been a very intense craving of mine during much of my pregnancy. I drink it all the time and Eric replenishes my supply just as often as he brings me water, but milk is quite a bit more expensive. So it hasn’t been easy on our pocket books. Yesterday, when we were shopping Fred Meyer on our weekly grocery trip I was delighted to see that Kroger has dramatically reduced their prices on moo juice.

Now Kroger milk and Simple Truth milk have a much lower price tag and it’s a great opportunity to get a little more dairy in your routine. I picked up a little extra so I could also use it in a cake that I wanted to make from scratch, as a celebration of the spring season I have so anxiously been awaiting. I decided on a vibrant and colorful poke cake which I made into a tie-dye appearance by dying the mix and doing a bit of “latte art” inspired pouring.

Eric was upstairs working on the nursery when I was making this and the smell filled the house so he had to come see what I was making. He said it was the best thing he ever smelled. I think it has been a long time since I made a cake. The poke cake is finished by poking a series of holes with the back of a wooden spoon and filling them with sweetened condensed milk to make the cake super moist. As a topping, I made my own whipped cream with my mixer.

The top of the cake, without the frosting, has a very leafy appearance, but when you cut into it it looks tie-dyed. It’s a beautiful representation of new life springing up around the damp and dreary landscape of a particularly long winter. It’s great that the cost of the cake was cheaper because of the great deal I got on the Kroger milk at Fred Meyer.

Tie Dye Poke Cake

Ingredients

  • 1 cup butter softened
  • 2⅓ cups sugar
  • 5 egg whites
  • 1 tablespoon vanilla
  • 3 cups flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ cups Kroger Milk
  • Gel Food Coloring
  • 1 Can of Sweetened Condensed Can Milk
  • Frosting
  • 1 Cup of Heavy Whipping Cream
  • Fresh Berries

Instructions

  1. Cake
  2. Preheat oven to 350
  3. In a stand mixer - cream the butter and sugar together - 3 minutes on medium
  4. Add in eggs, vanilla mix well
  5. In a bowl mix together - flour, salt, and baking powder
  6. Add into the creamed butter - flour mixture and Kroger Milk
  7. Once the batter is mixed well - separate the batter into 4 bowls and add in the food coloring of your choice.
  8. In a greased 9x13 pan - add spoonfuls of the colors ( ½ your batter) - make sure none of the same color are touching. Using a knife - drag the knife around the cake to make a tie dye pattern
  9. Add another layer doing the same thing
  10. Bake for 40 minutes
  11. Allow to cool - poke about 20 holes in the cake and pour the condensed milk
  12. Topping -
  13. In a stand mixer on medium - whip the heavy whipping cream for 5 minutes - add in 1 teaspoon of vanilla if you want a flavor.
  14. Frost the cooled cake - top with fresh fruit.
