Loaf Cake with Fruit Compote

I am hustling to get all my turkeys in a row for the holidays and all of the tasty dishes I’m going to be serving up this weekend.  Thanksgiving dinner, obviously is a lot of work and it gets super chaotic with all of the relatives and guests that come around to dig in so I like to lean on my delicious but quick and easy side dishes to get me through and I have a dessert dish that is dazzling and practically already done with a couple of simple alterations that really take it to the next level.

I started with a Marie Callender’s Loaf Cake that I got from the frozen section in Fred Meyer.  These loaf cakes are ready-to-heat-and-eat.  They can go straight from freezer to oven to table.  But I’ve got a quick way to top that.

The loaf cakes come in a variety of bakery inspired flavors from Double Chocolate Chip to Dutch Apple.  Because they are Marie Callender’s they are just like homemade and with my extra touches these easy to make and easy to clean up loaf cakes become an at home creation that is uniquely yours.  I started with the dutch apple loaf cake and just followed the cooking directions, then I made a yummy fruit compote that is just as easy and really gives it an added layer with a personal touch.

To really finish it off, I couldn’t resist giving it a bit of cool and creamy, delicious Reddi-Wip.  It feels indulgent, but guilt free.  One serving of Reddi-Wip is 15 calories.  Reddi-Wip is made with real cream and I always go through so much of it this time of year, because I love topping my desserts and hot cocoa with it.

Loaf Cake with Fruit Compote

:

Ingredients

  • 2 cups mixed berries
  • ½ cup sugar
  • ½ cup water

Instructions

  1. Combine berries, sugar and water in a saucepan and cook over low heat for 25 minutes.
  2. Spoon warm fruit compote over the loaf cake.
  3. Add a serving of Reddi-Wip to top it off.
  4. Enjoy!
