Easy Homemade Chicken Pot Pie

Ingredients
  • 20 oz of Mixed Veggies - thawed
  • 1 Tablespoon of Olive Oil
  • ½ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup half-and-half
  • pinch of cayenne
  • ¼ teaspoon of paprika
  • pinch of red pepper flakes
  • ½ teaspoon of salt
  • ½ teaspoon of pepper
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion flakes
  • 2 Cups of Chicken breast, cooked and chopped
  • 2 pie crusts (deep dish 9 inch ) or 5 small pie crusts
  • 2 refrigerated top crust
Instructions
  1. Preheat oven to 400
  2. In a large saucepan - heat oil over medium high heat. Add veggies - cook for 3 minutes
  3. In another saucepan over low heat combine half and half and chicken broth
  4. Add flour to veggies, stirring well, cook one minute stirring constantly.
  5. Slowly add chicken broth mixture to the veggies. Stir constantly till the sauce has thickened.
  6. Add all the seasoning and cooked chicken
  7. Pour the picture into each pie crust and top with pie shells
  8. Cut slits to allow steam to escape
  9. Bake for 45 minutes -- of until the crust is golden brown
  10. Enjoy!
