Cheesy Enchilada Rice Skillet Recipe
- 1 cup uncooked rice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup canned corn kernels, drained
- 1 cup canned black beans, drained and rinsed
- 1½ Cup of Red Enchilada Sauce
- ½ Cup of Green Enchilada Sauce
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- Pinch of Salt and Pepper
- 2 cups shredded Mexican blend cheese
- 2 tablespoons chopped fresh cilantro leaves
- In a large skillet - cook rice according to the instructions on the box
- In another large skillet - heat olive oil - add garlic, onion and bell pepper
- Cook for 5 minutes
- Add rice, salt, pepper, black beans, corn both enchilada sauces, chili powder, cumin
- Mix and Wait about 5 minutes
- Add cheese to the top
- Cover and heat till cheese is completely melted
- Garnish with cilantro
- Enjoy
