Copycat Recipe: Homemade Thin Mints

This is my dad’s favorite cookie – Thin Mints !!! They are mighty expensive so I thought that I would make a frugal copycat recipe ๐Ÿ˜‰

They are not gluten free so I could not try them but they do get the Mr.Savvy seal of approve ( he ate 20 cookies today alone)

They best thing about the recipe there are just two ingredients – that is right just 2! I like to keep my recipes simple, frugal; tasty!

This is a recipe that you must try because tasting is believing.

What you need

1) Ritz Crackers ( I know what you are thinking – but just try it ๐Ÿ˜‰ )

2) Chocolate Mints

3) Pan with Parchment Paper

What to do

1) Create a double broiler ( simply put water in a pan while placing a pan on top of the pan with water and turn up the heat) – this will cause the chocolate to melt but not burn ๐Ÿ™‚

2) Give the Ritz crackers a chocolate bath! I used a fork to dip the crackers in the chocolate

3) Place “cookie” on the parchment paper – when the tray is full place tray in the freezer and wait for 20 minutes.

4) Enjoy!!!!

This recipe was inspired by one my grandmother use to make ( though she used chocolate and peppermint extract )

    These are sooo good! My daughters and I made them at Christmas time along with a few others for goodie baskets. They were very simple and a big hit with everyone.

    A little expensive, buts sounds pretty good! I agree tho, that the chocolate cookie inside made the Girl Scout thin mints! Also, I sure was hoping you were going to tell us that you had a lo-fat or no-sugar recipe! (One can dream!)

    You can use almond bark and peppermint oil from candy store along with the Ritz crackers. I make these at Christmas time and everyone says they taste just like the Girl Scout thin mints. I wouldn’t know cause I do not like mint! Almond bark is sold at Walmart for about $2.60 maybe a little less.

    Just made these oh my goodness soon yummy. I went to Cvs they still had Xmas candy on sale so I brought the Hershey mint truffle kisses for $1.50 and they had ritz crackers buy one get one. I only spent $2 after my $2 cvs rewards. I unwrapped the kisses and popped them in the microwave I’m too lazy for the double boiler.:) thank you budget savvy diva

      Okay I’m so glad you actually tried this and shared the results! I’ve been thinking of trying this recipe ever since Budget Savvy Diva posted it, but was afraid by the idea of Ritz crackers. I came back before buying everything to see if anyone had tried it and what they thought.     I am going to attempt to make these this Friday but since I’m new (well just picking up my cooking mitts again) to this, I had a few questions.

    1.) I read that one of the other Budget-Diva’s had popped them in the microwave to melt them, how long should I put them in there so they don’t melt? It’s going to take me a while to work up the courage to do the pot in the pan? I don’t get it..

    2.) Could I get a review from Mr. Savvy on taste? What happens to the Ritz? Does the taste not linger outside the chocolate? The salty taste?

    I’m thinking of making these to use for Valentine’s day goodies to pass out to co-workers/friends so I can’t wait to try these out :]

      I can’t vouch for the taste yet since I haven’t tried it, but as for microwaving the chocolate, I’d recommend doing it in 20-30 second intervals {depending on the power of your microwave} and stirring in between. This saves them from burning and lets you know when they’re really done. If they’re chocolate pieces, odds are they won’t just melt down without being stirred so they’re easy to burn. ๐Ÿ™‚ The double boiler is nice {or just a pan with a little water in simmering and a metal bowl on top} because it’s hard to burn the chocolate this way. If you must use the microwave, though, definitely do it in short bursts so you don’t lose track of time and burn the chocolate.

    Awesome! Made these with Whole Wheat Ritz from my stockpile, store brand milk chocolate chips and a little peppermint extract!!! Will have to stock up on Andes on Valentines clearance and use those next time.

      Thank you. I was sitting here thinking about just melting some chocolate and adding peppermint extract, since I don’t want to run to the store just for Andes mints. ๐Ÿ™‚

    I bought a bag of toll house nestle dark chocolate & mint chocolate chips and melted them in the microwave. I then bought a box of the walmart brand Ritz. They taste the same only cheaper! The chocolate chips where $2.69. The crackers where only $2.18

      I got a bunch of bags of those chocolate and mint chips after christmas and was trying to think what else to do with them besides the obvious…. at .97 a bag…. I couldn’t resist! I will just have to try this now!!

      If you are going to buy Oreos, plus Andes mints, it might be cheaper to buy the Thin Mints from the Girl Scouts. It sounds like it would work great when it isn’t GS cookie season, though. Using the whole Oreo, especially the ones with mint filling, would probably be pretty good.

    so i wanted these, NOW and didnt have any ritz, but i had andes chips, so i used vinilla waffers! yummy!

    Never did it with Andies Mints. I’ve always used chocolate chips and a couple drops of mint extract and added some wax to keep them shiny after they set. My mom and I have made them for years. YUMMY!!!!

    I love these! I have always just done choc chips and pepp oil but I bet the andes mints make it soooo good. Can’t wait to try it!

    I bet this is good! The recipe using the ritz crackers, peanut butter in the middle and the melted chocolate on the outside tastes just like girl scout tagalongs!! So makes sense that this one would taste like the thin mints. My family loves the peanut butter ritz recipe so much I’ll have to try this one too!!

    If you need to eat gluten free, try making this with glutino crackers. I haven’t tried this particular recipe yet, but we have made copy cat peanut butter patties with glutino crackers spread with peanut butter and dipped in chocolate almond bark…delicious! And just like the girl scout cookies! My GF girl loves them.
