Chocolate Peppermint Shortbread Cookies Recipe

First off I need to give a shout out to my dad for helping me come up with recipe ๐Ÿ™‚

We were in the cookie aisle at Winco and I thought a chocolate covered cookie would be a great idea and my dad agreed

We could not agree on what cookie to use as the base but finally agreed on shortbread cookies ๐Ÿ™‚

Side Note – My husband ate ALL the cookies in the picture above ๐Ÿ™‚

I thought the Lorna Doone Shortbread cookies are a perfect choice – I decided to have the textured top be the bottom of the cookie

I also decided not to dip the cookie only on one side – you can dip the whole thing but I found it pretty messy when I tried to do it that way

This is also a perfect last minute treat for family or friends

Also if it is past Christmas it is a perfect way to get rid of all those extra candy canes —- I always seem to have a ton laying around after Christmas

This treat is easiest enough for kids to help make – and they sure are pretty

Chocolate Peppermint Shortbread Cookies Recipe

Ingredients

  • 25 Short Bread Cookies
  • ½ Cup of Chocolate Chips
  • Candy Canes โ€“ Smashed into Small Bits

Instructions

  1. Place the chocolate chips in a microwave safe bowl โ€“ microwave 30 seconds at a time stirring each time till it is completely smooth
  2. Dip half of the cookie in chocolate
  3. Lay on parchment paper lined cookie sheet
  4. Sprinkle Candy Cane pieces on top
  5. Place in the the fridge for 30 minutes for the chocolate to set
  6. Enjoy!
