Southwest Wontons Recipe

This is such a FUN recipe to make — it tastes like something that would be difficult to make but it really is simple — and it is done in under 20 minutes

I made my wonton vegetarian but you can add some shredded cooked chicken

You can totally change the type of veggies I added – when I make this dish again I am going to add jalapenos to give it an extra kick! I think recipe would go perfectly with that avocado dipping sauce that I created

Ranch Avocado Dipping Sauce

  • 1/2 cup ranch salad dressing
  • 1/2 medium ripe avocado, peeled and mashed
  • 1 tablespoon minced fresh cilantro
  • 1 teaspoon grated lime peel

Just mix all the ingredients together and enjoy 🙂

I loved the fact I was able to use so many ingredients that I already had in my cupboard ( corn, black beans, pepper, chili powder, salt and cumin)

The one item not in the picture for some reason ( DAD – who set up the picture) is my red bell pepper — I think bell peppers might be one of my favorite ingredients ever!!! It is something I ate a ton of as a kid

I decided to fry the wontons but I will leave how to bake this dish in the recipe box 🙂

I garnished the dish with a little cilantro – I personally would pack in A TON more cilantro but my mom hates cilantro so I have to use it sparingly

Southwest Wontons Recipe

Ingredients

  • ¼ Cup of Onion Chopped
  • ¼ cup of black beans
  • ¼ cup of corn
  • 1 clove of garlic, minced well
  • wonton wrappers
  • Mexican Cheese
  • Oil
  • ½ Cup of Red Pepper Chopped
  • pinch of cumin
  • ¼ tsp of pepper
  • ¼ tsp of salt
  • ½ tsp of chili powder
  • Garnish - Cilantro

Instructions

  1. Heat the oil in a large skillet
  2. - Mix all the ingredients except the garnish in a bowl
  3. Place 2 teaspoons of mixture in the middle of each wrapper add a pinch of cheese and fold wrapper in half so it creates a triangle. Run your finger along the edges with a little water to secure the edges. Frying - Heat 1 inch of oil to 350 - cook for a couple minutes till golden brown - place on paper towel to get rid of extra oil
  4. Baking - Preheat to 375 and Brush a little oil on top and place on cookie sheet lined with parchment paper
  5. - Bake for about 15 minutes or till wrappers brown
