Roasted Asparagus with Feta Recipe

Ingredients
  • 1.5 lbs fresh crisp asparagus - ends cut
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • ¼ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • Pinch of salt
  • ¼ teaspoon of pepper
  • 1 tablespoon chopped fresh Italian parsley
  • 4 ounces crumbled feta cheese
  • 1 lemon - juiced
Instructions
  1. Preheat oven to 400
  2. Heat oil in a large skillet - add lemon zest, oregano, red pepper flakes, and garlic - cook for 4 minutes.
  3. Turn off heat - add asparagus - make sure it is lightly coated with oil mixture
  4. Lay on a baking sheet and sprinkle feta on top - cook in the oven for 12 minutes
  5. Drizzle lemon juice and parsley on top
  6. Enjoy!
