Roasted Asparagus with Feta Recipe
- 1.5 lbs fresh crisp asparagus - ends cut
- ¼ cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- ¼ teaspoon dried oregano
- ¼ teaspoon red pepper flakes
- Pinch of salt
- ¼ teaspoon of pepper
- 1 tablespoon chopped fresh Italian parsley
- 4 ounces crumbled feta cheese
- 1 lemon - juiced
- Preheat oven to 400
- Heat oil in a large skillet - add lemon zest, oregano, red pepper flakes, and garlic - cook for 4 minutes.
- Turn off heat - add asparagus - make sure it is lightly coated with oil mixture
- Lay on a baking sheet and sprinkle feta on top - cook in the oven for 12 minutes
- Drizzle lemon juice and parsley on top
- Enjoy!
