Roasted Tomato and Basil Shell Pasta Recipe
  • ¼ c. extra virgin olive oil
  • 2garlic cloves, finely chopped or minced
  • ½ teaspoon of salt
  • ½ teaspoon of pepper
  • Pinch of Red pepper Flakes
  • 1 pt. small cherry tomatoes - cut in half
  • 10 oz of medium seashell pasta
  • ½ c. Parmesan cheese
  • ¾ c. thinly sliced fresh basil leaves
  1. Over medium heat add oil, garlic and pepper flakes in a large skillet - make sure not to burn the garlic
  2. Stir in tomatoes, pepper and salt --- lower heat a little bit and cook for 5 more minutes - after 5 minutes set the heat to low and cook for 10 more minutes
  3. Cook Pasta and Drain pasta during this time.
  4. Add pasta to the tomatoes --- add cheese and basil --- mix together for 1 minute
  5. Serve and Enjoy. To make this recipe gluten - free simply use gluten - free pasta
