Wash and take off the steams of the strawberries and mash with a potato masher
add in lemon juice and mix
Combine strawberry mixture with sugar in a large pot
Heat should be medium low -- keep mixing till all the sugar is combined
Raise the heat to high till the mixture is at a roaring boil --- you want to heat it for a 10 minutes -- keep stiring
At the end of 10 minutes, the mixture is still runny --- do not worry. Take the plate and pour about 1 teaspoon on the plate -- run your finger through the middle of the jam and draw a line -- if it remains clear --- yay the jam is done ... if not keep cooking for 5 more minutes -- keep testing until it passes
Take off heat and let the jam cool completely and bottle in a sterilized jar.
