Asparagus-Goat Cheese Pasta Recipe

Ingredients
  • 1 Pound of Rotini Pasta
  • 1 Pound of Asparagus - Cut into 1.5 inch bite size pieces
  • Salt
  • Pepper
  • 1 Teaspoon of Lemon Juice
  • 1 Tablespoon of Fresh Tarragon minced
  • 1 log of goat cheese
Instructions
  1. Cook pasta -- about 4 minutes before the pasta is done cooking add the asparagus ( this helps saving time)
  2. In a small bowl - combine tarragon, goat cheese, lemon juice, plus pinch of salt and pepper
  3. Drain pasta/asparagus ( make sure to save about ½ cup of pasta water)
  4. In a large bowl combine water, goat cheese mixture, pasta/asparagus --- mix for about 1 minute then serve!
  5. This dish is great hot or cold :)
