Asparagus-Goat Cheese Pasta Recipe

- 1 Pound of Rotini Pasta
- 1 Pound of Asparagus - Cut into 1.5 inch bite size pieces
- Salt
- Pepper
- 1 Teaspoon of Lemon Juice
- 1 Tablespoon of Fresh Tarragon minced
- 1 log of goat cheese
- Cook pasta -- about 4 minutes before the pasta is done cooking add the asparagus ( this helps saving time)
- In a small bowl - combine tarragon, goat cheese, lemon juice, plus pinch of salt and pepper
- Drain pasta/asparagus ( make sure to save about ½ cup of pasta water)
- In a large bowl combine water, goat cheese mixture, pasta/asparagus --- mix for about 1 minute then serve!
- This dish is great hot or cold :)
