In a medium size bowl combine salt, pepper, panko, flour, and coconut
In a small bowl whisk the eggs
For each chicken tender place in the egg mixture then transfer to the panko mixture
In a large skillet place a drizzle of olive oil - over medium heat cook the chicken a couple minutes on each side -- this is going to help "toast" the coconut
Place the chicken still in the skillet in the oven for about 10 - 15 more minutes till the chicken is fully cooked
Serve with BBQ sauce or Ketchup

To make this dish gluten - free simply exclude the panko and use 2 cups of gluten - free flour
