2 pounds of yukon gold potatoes - peeled and cut into quarters
Olive oil
3 Tablespoons of fresh parsley chopped
2 tablespoons of fresh Rosemary chopped
Salt
Pepper
Instructions
Boil a large pot of water - add potatoes. Let them cook for about 15 minutes - you want them firm enough not to fall apart but soft enough you can cut the potato with the side of a fork.
Drain water
Drizzle olive oil on top of the potatoes
Add seasoning --- give a light stir and serve.
