Fresh Herb Potatoes Recipe

  • 2 pounds of yukon gold potatoes - peeled and cut into quarters
  • Olive oil
  • 3 Tablespoons of fresh parsley chopped
  • 2 tablespoons of fresh Rosemary chopped
  • Salt
  • Pepper
  1. Boil a large pot of water - add potatoes. Let them cook for about 15 minutes - you want them firm enough not to fall apart but soft enough you can cut the potato with the side of a fork.
  2. Drain water
  3. Drizzle olive oil on top of the potatoes
  4. Add seasoning --- give a light stir and serve.
