In a bowl combine pepper, salt, sugar, paprika, garlic powder, rosemary, cayenne
Rub the seasoning all over the tri-top - cover and place in the fridge for 2 hours
Take the tri-tip out of the fridge and let it rest for 1 hour
In a mason jar place - oil, garlic, Dijon, and vinegar. Shake, shake, and shake some more
Place the tri-tip on a HOT grill and brush oil mixture on both sides - turn over and brush every 5 minutes for about 30 minutes. Make sure to use a meat thermometer you want it to be around 140.
Let the meat rest for 15 minutes before slicing and enjoy!
