Cheesy Green Chili Rice Casserole Recipe
- ⅓ Cup of White Onion, Diced
- 2 tablespoons butter
- 2 cups hot cooked instant rice
- ¼ Cup of Sour Cream
- ¼ Cup of Ricotta
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 1 can (4 ounces ) chopped green chilies, drained
- 1 Cup of shredded cheddar cheese
- Parsley ( Chopped) Garnish
- Preheat oven to 350
- In a medium skillet over medium heat melt butter add onions. Cook for 5 minutes
- Add ricotta and sour cream to the onions. Add salt, pepper, and green chilies. Stir and heat for 3 minutes
- Add cooked rice to the mixture - mix VERY well.
- Turn off heat and transfer mixture to a greased 8x8 casserole dish
- Sprinkle 1 cup of cheese on top of the rice
- Place casserole dish in the oven. If you want to use the broiler this is the time or cook at 350 for 10 -- 15 minutes
- Garnish with parsley
