Slow-Cooker Chicken Tortilla Soup Recipe
 
Ingredients
  • 3 Cups of Shredded Cooked Chicken
  • 15 ounces of crushed tomatoes
  • 12 ounces of Enchilada Sauce
  • ½ Cup of Onion Chopped
  • 4 ounces of green chili ( can mild)
  • 2 Cups of Water
  • 14.5 ounces of low sodium chicken broth
  • 1 teaspoon of cumin
  • 1 Bay leaf
  • 1 teaspoon of pepper
  • ½ teaspoon of salt
  • 1 teaspoon chili powder
  • ¼ cup of cilantro - chopped finely
  • 1 cup of frozen corn
  • chip strips of garnish
Instructions
  1. Place all the ingredients into your slow cooker - set it to low for 6 hours or high for 3 -4
  2. Enjoy ( it really is that easy) remember to take out the bay leaf before serving
