In a large stock pot - boil water and place potatoes ( I cut my potatoes into ⅛ths ) cook until the potatoes are semi- cooked --- test with a fork ( the fork can easily go into the potato but the potato is not falling apart )
Once the potatoes are cooked - drain water -- pour cold water on the potato to stop it from cooking more
Once the potatoes are cool - place the potatoes in a large mixing bowl
Add the rest of the ingredients - lightly mix everything together
Serve and Enjoy
