Easy Beef Enchiladas Recipe
 
Ingredients
  • ½ Tsp of Chili Powder
  • 1 Tsp of Cumin
  • Pinch salt and pepper
  • 8 Flour Tortilas
  • 1 Red Bell Pepper ( Diced well)
  • 1 Green Bell Pepper ( Diced Well)
  • 1 Pound of ground beef
  • 6 oz of Green Chilies ( Canned and Mild)
  • 3 Pimentos ( Chopped)
  • ⅓ cup of Parmesan Cheese
  • 1 Cup of Queso - Crumbled
  • 1.5 Cups of Green Enchiladas Sauce
  • 1 Cups of Monterey Jack Cheese Shredded
  • 1 Cup of Cheddar Cheese ( Not Pictured) Shredded
Instructions
  1. Preheat oven to 375 lightly grease a 9x13 casserole dish
  2. In a large skillet - add pound of ground beef - once it is cooked and grease drained through add green pepper, red pepper, cumin, salt, pepper, green chiles, pimentos, and ½ cup of Enchiladas Sauce
  3. Once mix turn off the heat - add a ⅓ cup of mixture into each tortillas top with small bit of queso - into the middle and spread - fold over the sides and roll
  4. Place the seam end down into the casserole dish - once the tortillas have been add cover all of them with the rest of the sauce and Monterey jack, parmesan, and cheddar cheese
  5. Bake uncovered for 30 minutes
  6. Enjoy
