Preheat oven to 375 lightly grease a 9x13 casserole dish
In a large skillet - add pound of ground beef - once it is cooked and grease drained through add green pepper, red pepper, cumin, salt, pepper, green chiles, pimentos, and ½ cup of Enchiladas Sauce
Once mix turn off the heat - add a ⅓ cup of mixture into each tortillas top with small bit of queso - into the middle and spread - fold over the sides and roll
Place the seam end down into the casserole dish - once the tortillas have been add cover all of them with the rest of the sauce and Monterey jack, parmesan, and cheddar cheese
Bake uncovered for 30 minutes
