Lemon Blueberry Bread Recipe
- ⅓ cup melted butter
- 1 cup white sugar
- ¼ cup freshly squeezed lemon juice
- 2 eggs
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ cup milk
- zest of 1 lemon
- 1 cup fresh or frozen blueberries
- 2 tablespoons all-purpose flour
- Preheat oven to 350
- Grease a loaf pan VERY well
- In a bowl mix together - butter, sugar, eggs, and lemon juice
- In another bowl - mix together the dry ingredients - flour, baking powder, and salt - once mixed - add the wet ingredients - egg mixture
- Add milk
- Mix everything very well together
- Fold in blueberries and lemon zest
- Pour in the baking pan
- Bake for 1 hour if it is not fully cooked - cook for 10 - 15 more minutes
- Let completely cool before taking out of pan
