Pecan Coffee Cake Recipe
- 2 cups all-purpose flour
- ¼ teaspoon salt
- 1 tablespoon baking powder
- 1 cup butter, softened
- 1 cup sour cream
- 2 cups white sugar
- 2 eggs
- 1 tablespoon vanilla extract
- Topping
- ½ cup brown sugar
- 1 cup chopped pecans
- 1 teaspoon ground cinnamon
- 2 tablespoons butter, melted
- Preheat oven to 350 - place pecans onto a cookie sheet and bake for 4 minutes
- In a bowl - mix brown sugar, pecans, melted butter and cinnamon - I used a little bit of cinnamon sugar as well
- In a large bowl mix all the dry ingredients together - in another bowl mix all the wet - beat the eggs in one at a time - Slowly mix the wet into dry
- Once the batter is made spread onto a 9x13 baking pan - it will rise do not worry
- Place the pecan topping
- Bake for 40 minutes
- Enjoy
