One Pan Cheesy Lemon Chicken Pasta Recipe
- 1 pound chicken breasts
- 2 Tbsp olive oil
- ½ cup diced yellow onion
- 1 Tbsp minced garlic
- 8 oz (about 2½ cups) small, dry pasta
- 1 cup grape tomatoes, halved
- 2 cups chicken broth
- zest and Juice from one lemon
- 1 cup water
- 1 tsp dried basil
- 1 tsp salt
- Pinch of Cayenne Pepper
- ¼ tsp red pepper flakes
- ¼ tsp pepper
- 1 cup shredded Mozzerella
- In a VERY large skillet - heat oil and add onions and garlic
- Add chicken - make sure it is cut into strips or cubed ( you choose)
- Cook the chicken -Once cooked add uncooked pasta
- Add tomatoes, chicken broth, lemon zest and juice, water, basil, cayenne, red pepper flakes, salt and pepper
- Bring to a boil - lower heat and cover - cook for 15 minutes and check
- Stir and cover - cook for another 10 minutes
- If the pasta is cooked great if not - keep uncovered and cook till pasta is soft
- Add cheese and cover till melted
- Enjoy
