Easy Cheesy Enchiladas
 
Ingredients
  • 8 Flour Tortillas
  • 2 Cups of Mexican Cheese
  • 1 Can of Green Enchiladas Sauce
  • 1 Package of Yves Veggie Ground
  • 2 Tablespoons of Cilantro
  • 1 Can of Fire Roasted Green Peppers
  • 3 Tablespoons of Olive Oil
  • Salt and Pepper
  • 2 Cloves of Garlic, Minced
Instructions
  1. Preheat oven to 375
  2. In a skillet over medium heat - add in oil and garlic and cook for 3 minutes
  3. Add in Yves Veggie Ground - pinch of salt and pepper
  4. Heat for 5 minutes
  5. Add in Green Peppers and ¼ Cup of Enchiladas Sauce
  6. Take the skillet off the stove
  7. Grease a 9x13 casserole pan
  8. Place Enchiladas filling from the skillet in the lower portion of the tortillas add a little cheese and cilantro
  9. Roll and place into the pan - repeat 7 more times
  10. Pour the rest of the enchiladas sauce
  11. Place the rest of the cheese on top of the sauce
  12. Bake uncovered for 30 minutes
  13. Serve
