Mom's Chicken Cacciatore
- 1 cup all-purpose flour for coating
- ⅛ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 chicken, cut into pieces
- 1 tablespoon vegetable oil
- ½ onion, chopped
- 2 clove garlic, minced
- ½ green bell pepper, chopped
- 7 ounces can diced tomatoes
- ¼ teaspoon dried oregano
- ¼ cup white wine
- 1 cup fresh mushrooms ( I did not do this since my husband despises them)
- Penne Pasta ( cooked)
- In a large plastic bag place pepper, flour, chicken and salt. Shake until every piece of chicken is coated.
- Heat oil in large skillet.
- Add chicken and cook till sides are brown - remove
- Add onions, garlic, bell peppers and cook for 5 minutes. Add tomatoes, oregano; wine. Cover and simmer for 30 minutes.
- At the 15 minute mark add chicken to the sauce.
- Add mushrooms and let simmer for 10 minutes
- Place over pasta and enjoy!
