Homemade Blueberry Syrup
- 2 Cups of Blueberries ( fresh or frozen ( thawed) )
- 1 Cup of Water
- ½ Cup of Sugar
- ¼ Lemon - zest and juice
- Place water and berries into a stockpot over medium heat. Use a potato masher and mash the berries.
- Once the mixture starts to boil - lower heat and simmer for 15 minutes. Stir every 5 minutes.
- Strain the mixture.
- Discard the berries or use them as a topping ( mix in a little sugar to cut that tart taste)
- Place drained juice mixture back into the pot.
- Add sugar and lemon.
- Stir and simmer for about 15 minutes or until semi - thick.
- It should nicely coat the back of a spoon.
- Enjoy!
