Easy Chicken Tacos

Very Diet Friendly + Gluten FREE but FULL of Flavor
Ingredients
  • ½ tomato diced
  • 2 teaspoons extra-virgin olive oil
  • 1 pound boneless, skinless chicken breasts, cut into chunks
  • Salt
  • pepper
  • ½ finely chopped
  • 1 clove garlic, very finely chopped
  • 1 jalapeƱo peppers, seeded and very finely chopped
  • 2 tablespoons lime juice + Zest
  • 1.5 tablespoons chopped fresh cilantro
  • corn tortillas, warmed
  • ¼ cup reduced-fat sour cream ( optional )
  • 2 limes, cut into quarters
  • Cheddar Cheese ( Optional )
Instructions
  1. Heat oil in a large pan - add chicken. Season with salt and pepper. Once the chicken is cook place chicken aside.
  2. Add onions to the pan - cook till tender. Add garlic and jalapeno - cook for one minute.
  3. Add lime juice and zest and stir.
  4. Add chicken back into the pan + tomatoes.
  5. Stir in cilantro.
  6. Serve and enjoy with lime, tortillas, sour cream, and cheese :)
