Wash chicken inside and out and pat dry. Rub the cavity with salt,pepper, and cumin. Drizzle outside with olive oil and rub the Herbs De Provence on the skin
Put a layer of onions and red pepper on the bottom of the crock pot - stuff the bird with apples, carrots, and the rest of the pepper and onion.
Cook on low for 8 hours.
