I have been in a mood this week to make some of my favorite current sides

I posted another recipe recently – Easy Parmesan- Roasted Asparagus Recipe

Both of these recipes are perfect side dishes for pretty much every meal – and of course they are gluten – free πŸ™‚

They are fresh and simple. Can I share a little secret with y’all – I actually prefer these veggies to french fries or any type of fried veggies.Β  There is something so satisfying when there is a perfect harmony of flavor and freshness

Now this is my standard Roasted Garlic Lemon Parmesan Broccoli Recipe — but sometimes I like to add a little zip with red pepper flakes πŸ™‚

Did I mention how easy this recipe is to make – done in under 30 minutes!

Roasted Garlic Lemon Parmesan Broccoli Recipe

Ingredients

  • 2 heads of fresh broccoli - cut into bite size pieces
  • 1 Tablespoon of Olive Oil
  • ½ Teaspoon of Salt
  • ½ Teaspoon of Pepper
  • 2 Garlic Cloves, minced
  • ½ Teaspoon of Lemon Juice
  • ¼ Cup of Shredded Parmesan Cheese

Instructions

  1. Preheat oven to 400 - line a cookie sheet with parchment paper
  2. In a mixing bowl - fold together everything BUT the parmesan cheese
  3. Spread the broccoli on the parchment paper and bake for 18 minutes
  4. Finish off with the parmesan cheese - cook for 2 more minutes
  5. Serve and Enjoy
