Spicy Tortilla Roll-Ups Recipe

I was first introduced to roll ups by Costco

I know what you are thinking – Costco — but it is true – I remember back in day my parents would pick up one of their roll – up trays for everyone in our family to snack on for the next couple of days

We would do this during the summer when it would be very hot in Los Angeles since it was too hot to have the oven going – I grew up in a house from the 1920s which did not have AC — I did not have AC is my residence until I was 23 a couple of years ago

AC is wonderful — but back on the roll-ups

Spicy Tortilla Roll-Ups Recipe

I was at the grocery store and I picked up what I normally use for roundups which is tortillas BUT then I saw these Flatout Pinwheel Flatbread – so I decided to use that

I have to say it was much easier to use the flatbread since it was already a rectangle shape

I just noticed there is no cream cheese in the picture — not too sure what happened there but there is 8 oz of light cream cheese in the recipe 🙂

I love using red and green peppers in my roll – ups since it gives it so much color ( plus tons of flavor )

Spicy Tortilla Roll-Ups Recipe

Ingredients

  • 8 oz of light cream cheese
  • 4 ounces of diced chilies
  • ½ cup of red pepper diced
  • 4 ounces of sliced pimento peppers
  • ½ cup of green pepper
  • 3 Tortillas or similar
  • pinch of salt and pepper
  • 1 jalapenos - seeded and diced

Instructions

  1. In a bowl whip together all the ingredients - to make the cream cheese easier to deal with - I let it get to room temperature and then I used a hand mixer to whip it up
  2. I folded all the ingredients together except the flatbread
  3. Spread the filling on the flatbred - leaving about ½ inch uncovered on every side
  4. Roll up the flatbread and cut 1 inch pieces
  5. Enjoy
