Starbucks Iced Lemon Pound Cake Recipe

If you did not know Eric works for Starbucks – he is always having to try out all their products
Well last week he told me I should try and make Starbucks Iced Lemon Pound Cake – if you did not know Lemon cake ( okay pretty much lemon anything) is my favorite – I think it is because I grew up with a HUGE lemon tree in my front yard ( free lemon * woot woot*)
Eric helped me make sure it looked as close as the one from Starbucks – and he says that it is a VERY close match — and it is delicious in its own right as well π
To come up with this recipe I went on the Starbucks website and looked up the ingredients for the Starbucks Iced Lemon Pound Cake and tried my best
One thing I did to switch it up was use almond milk – Starbucks uses nonfat milk – I went with Almond milk ( we have allergies in my household) – Also there were items in the ingredient list that I had NO idea what it could be like “sodium metabisulfate” I know it must have to do with salt — so I tried
Here is my dad pour the batter into a loaf pan – the recipe makes enough for one loaf pan which will result in about 8 slices
Guys you have no idea how much out of my comfort zone the picture above is for me — I tend to take pictures very close — so I am forcing myself to take a step back ( what do you think?)

Starbucks Iced Lemon Pound Cake Recipe
Ingredients
- 1½ Cup of Flour
- ½ teaspoon of salt
- ½ teaspoon of baking soda
- ½ teaspoon of baking powder
- 1 Cup of White Sugar
- 2 teaspoons of vanilla extract
- 3 eggs
- 3 Tablespoons of Butter
- ¼ Cup of Lemon Juice ( about 1½ lemons)
- ½ Cup of Oil ( I used veggie)
- 1 Cup of Powdered Sugar
- 2 Tablespoons of Milk
- ½ teaspoon of lemon extract
Instructions
- Preheat oven to 350 - lightly grease a loaf pan
- In a bowl mix all the dry ingredients together - flour, sugar, baking soda, baking powder, and salt together
- In another bowl whisk lemon juice, melted butter, oil, eggs, lemon extract, and vanilla together
- Slowly combine the wet into the dry ingredients - once completely combined place in the loaf pan and place in a oven for 40 - 50 minutes
- In a small bowl - whisk milk and powdered sugar together to create a icing
- On the cooled down loaf start pouring the icing on top - I did this three time letting the icing set each time - it allows a thick crust to form
