I *heart* The Cheesecake Factory
This has nothing to do with the recipe – but the Cheesecake Factory has the BEST happy hour – I am not sure if it is national but our local one in Portland there is a happy from 4 pm – 6pm only at the bar
They have the BEST drinks for $5 and yummy treats for $5 — my husband loves the Fried Chicken Sliders – 4 for $5! Cheesecake is not sponsoring this at all – it just is a perfect Happy Hour and it costs so little π
My whole family loved this meal – I love the fact I was able to get in a nice amount of Spinach π
I opted for fresh pasta (Β I have been noticing a difference with the end product)
I also used greek yogurt – which worked out very well — much healthier than cream
Here is my dad making sure that we got tomato paste ( very important for the recipe π )
I just think this is one of the prettiest pictures ever —- it might be because I love pasta and cheese. Yeah… That is most likely it π
This recipe could be gluten free if I had used gluten free pasta π
This recipe makes about 8 oz of pasta ( so it is enough easily for 2 ) — this dish did not last very long
Sooo … I just made myself laugh at the picture above because it looks like Clark on the plate is looking at the pasta

Cheesecake Factory Copycat: Sundried Tomato Fettuccine Recipe
Ingredients
- 8 oz of pound fettuccine
- 4 tbsp. olive oil
- 3 cloves garlic, minced
- ⅓ cup sundried tomato halves, sliced
- 1 (14.5 ounce) can of petite diced tomatoes, drained
- 3 tbsp. tomato paste
- ½ tbsp. granulated sugar
- 4 oz of plain non-fat Greek yogurt
- ⅓ cup light sour cream
- 2 Cups cups baby spinach
- Pinch of salt and pepper
Instructions
- Cook pasta according to the instructions on the box
- While the pasta is cooking - in a small bowl mix the sour cream and yogurt together
- In a skillet heat oil - add garlic and cook for a couple minutes - add sun dried tomatoes
- After 2 minutes of cooking add sugar, tomatoes paste, and diced tomatoes
- Add seasoning and spinach
- Slowly add the sour cream mixture to the tomato sauce - once combined add cooked pasta
- Serve and Enjoy
