Rainforest Cafe Copycat Strawberry Lemonade

Have you ever been to the Rainforest Café? I usually go to the one in Downtown Disney in California – if you have not been it is TONS of fun! It is like eating in a rain forest — about every 15 minutes or so there is a thunder storm – but do not worry you will not get wet 🙂

What I like about this recipe is that it is not only SUPER simple but it is completely homemade — this is the type of recipe I would of loved to make as a kid under 10 to give me more confidence in the kitchen

Like I said there is not much to this recipe – since it is Strawberry season a pint of strawberries locally should cost only $1.50

This drink is perfect to share with everyone in your family – even my brother liked it

How refreshing does that look ?!!! The afternoon I made the drink — you will be making a lot — enough for about 10 drinks ( but it keeps well in the fridge ) – it was over 90 degrees

It being over 90 in Portland seems like the norm this summer ( which is something I am not too happy about — if you did not know AC is not a huge thing here in Portland, OR so many homes and business do not even have AC — it has not been pleasant)

Rainforest Cafe Copycat Strawberry Lemonade Recipe

Ingredients

  • 1 lb strawberries cut into small pieces
  • 6 lemons, juiced and set aside
  • 1 cup of sugar
  • 6 cups of water
  • Ice

Instructions

  1. In a small sauce pan - add sugar, strawberries, 1 cup of water and zest from one lemon
  2. Stir until it boils - Add mixture to a pitcher
  3. Add the rest of the water and lemon juice
  4. Stir
  5. Add LARGE amount of ice
  6. Stir and Enjoy 🙂
