Pesto Pasta with Chicken Sausage Recipe

Last Christmas Eric gave me a subscription to Food Network magazine — I never really used a recipe from it until now – I saw this lovely spinach pesto pasta with chicken sausage recipe
I decided to use the structure of that recipe but adapted it – first I ended up using basil for my pesto — there is something so lovely about a basil pesto; however, I just took a cooking class and we made fennel pesto and it is pretty amazing — so I might try the spinach next time
I also included a ton more cheese to my recipe and the addition of sun-dried tomatoes – I never use to use these type of tomatoes but I find that they are very helpful in Italian cooking
When I like to do is heat a small amount of olive oil in a pan and place the sun-dried and garlic into the pan — the oil gains tons of flavor from each ( seriously amazing )
This is everything you will need – I used pine nuts that are uber expensive so you can use walnuts if you would like in replacement
This recipe is enough for about 4 – 6 — you can make this recipe gluten free by using gluten free pasta 🙂

Pesto Pasta with Chicken Sausage Recipe
Ingredients
- 1 box of dried pasta
- 4 cups of basil
- ⅓ Cup of Olive Oil
- ¼ Cup of Pine Nuts ( toasted - 350 place on cookie sheet for 10 minutes)
- Zest of Lemon
- 2 Tablespoons of Sun Dried Tomatoes
- Pinch of Red Pepper Flakes
- ⅓ Cup of Parmesan Cheese
- 2 Garlic Cloves, Minced
- Pepper
- 3 Sausage - Cut into Bite size pieces
Instructions
- Boil water in a pot and cook all the pasta while the pasta is cooking
- Add a small amount of oil to a large skillet - add garlic, sun-dried tomatoes and cook for a minute - add sausage ( you just want to cook it for a couple of minutes) place sausage on plate and turn off heat
- In a food processor place basil, salt, Parmesan cheese, pine nuts and lemon zest ( just a pinch) and oil - process till well blended
- In the large skillet heat again add pasta, pesto, sausage and everything else --- I added in some basil leaves for more texture
