I love having pasta sauce on hand – it really is a convenient pantry staple. My favorite brand is Francesco Rinaldi Pasta Sauce – it really is a great value plus there are so many different types to choose from. Francesco Rinaldi mantra is “Made By Italians”. Also quality ingredients – finest tomatoes and freshest herbs for delicious and quick meals. Also the Francesco Rinaldi sauce I used was gluten – free.
I went to my local farm near my home where they sell their produce ( like I have stated many times before – I love being able to cook locally produced goods)
I wanted to make a gluten free side dish that was easy to make and picky eater friendly – so I decided on a bake which turned out super yummy
I used fresh zucchini that I picked up at a local farm and mozzarella cheese – you can use shredded if you would like but I love using the mozzarella as a whole.
I went to my local Walmart to pick up Francesco Rinaldi sauce – I decided on the Tomato, Onion and Garlic variety.
There are only 2 real steps to my recipe – placing all the ingredients in a skillet and placing the skillet into the oven at 375 for about 20 minutes
I ended up doing 3 layers of all the ingredients – it was so filling that I had it for dinner and I was full – also makes great leftover as well.

Cheesy Zucchini Bake Recipe
Ingredients
- 3 Zucchinis - sliced
- 12 oz of Mozzarella - sliced
- 1½ Cup of Francesco Rinaldi Pasta Sauce
Instructions
- Preheat oven to 350
- In a medium skillet - add a layer of sauce then zucchini, then cheese
- Do this 3 times will all the ingredients as used
- Bake for 30 minutes
- Enjoy!
