Easy Caprese Salad with Homemade Balsamic Reduction

This Caprese Salad is one of my favorite summer side dishes. It’s fresh, simple, and comes together in just minutes. Garden-fresh tomatoes, creamy mozzarella, fresh basil, olive oil, and a sweet balsamic reduction make the perfect combination.
Ingredients
- 4 large ripe tomatoes, sliced
- 8 oz fresh mozzarella, sliced or torn into pieces
- ¼ cup fresh basil, chopped
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
For the Balsamic Reduction
- 1 cup balsamic vinegar
- 1 tablespoon brown sugar (optional)
Directions
Make the Balsamic Reduction
- Add the balsamic vinegar and brown sugar (if using) to a small saucepan.
- Bring to a gentle boil over medium heat.
- Reduce heat and simmer for 10–15 minutes, stirring occasionally, until the mixture has reduced by about half and coats the back of a spoon.
- Remove from heat and allow it to cool. It will continue to thicken as it cools.
Assemble the Salad
- Arrange the tomato slices and mozzarella on a serving platter or bowl.
- Sprinkle with fresh basil.
- Drizzle with olive oil.
- Season with salt and pepper.
- Finish with a generous drizzle of the balsamic reduction.
Budget Savvy Tip
During summer, I love making this with tomatoes from the farmers market or my garden. It’s an inexpensive dish that looks impressive enough for BBQs, potlucks, and family dinners.
