What You Need

1 Pound of Chicken Tenders

2 Eggs

1 cup of sweetened coconut

1 cup of flour

1 cup of panko bread crumbs

pinch of salt

1/2 tsp of black pepper

Olive oil

What to Do

Preheat oven to 350

In a medium size bowl combine salt, pepper, panko, flour, and coconut

In a small bowl whisk the eggs

For each chicken tender place in the egg mixture then transfer to the panko mixture

In a large skillet place a drizzle of olive oil – over medium heat cook the chicken a couple minutes on each side — this is going to help “toast” the coconut

Place the chicken still in the skillet in the oven for about 10 – 15 more minutes till the chicken is fully cooked

Serve with BBQ sauce or Ketchup

Enjoy !

To make this dish gluten – free simply exclude the panko and use 2 cups of  gluten – free flour
