My family LOVES Fettuccine Alfredo – I make it on a monthly basis ( since it is actually really easy to make) and it is SOOOOOO much better than that stuff that comes in a jar
And this recipe is waist-friendly 🙂 I really tried to reduce the fat and calories as much as a could without leaving out flavor 🙂
Also I love the fact that everything is pretty much cooked in one pan ( you will have to cook the pasta in a separate pot — That is what I suggest) but you could try and cook it in the sauce but I have not tried that out yet

If you are wanting to make this recipe gluten free – just switch out the pasta for gluten free pasta 🙂
I was able to cut the calories and fat by using – 2% milk instead of heavy whipping cream, light cream cheese instead of full fat cream cheese, and light sour cream instead of full fat sour cream
You do not need all that full fat stuff to make an amazing deal – my parents LOVED this dish 🙂
This recipe makes enough for a main meal for 4

One Pot Skinny Fettuccine Alfredo Recipe
Ingredients
- 8 ounces fettuccine
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1¼ cups 2% milk
- 2 Cloves of Garlic, Minced
- Pinch of Salt and Pepper
- 2 ounces Neufchatel cheese
- ¼ cup grated Parmesan cheese
- Pinch of Red Pepper Flakes
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Boil a pot of water and cook pasta
- While the pasta is cooking
- In a skillet over medium heat - melt butter and all flour - keep mixing ( do not let the flour burn)
- Add milk - whisk - do this for 5 minutes
- Add garlic, salt , and pepper - whisk
- Add cheeses - whisk until sauce becomes thicker --- it will take a few minutes
- Add cooked pasta
- Garnish with red pepper flakes and parsley
- Enjoy!
