What You Need

Devil Foods Cake Mix ( 3 eggs, 1/2 cup of oil; water)

1/2 tsp of vanilla extract

1/2 teaspoon of peppermint extract

1 container of vanilla icing

12 – 15 drops of Green Dye

10 thin mint or grasshopper cookies

What to Do

In a blender — place cookies and blend till it is in powder form ( or close to it)

Preheat oven as instructed on the box. In a bowl combine box mix, eggs, vanilla,  oil, and the amount of oil as instructed on the box, and cookie

In a small bowl combine icing, peppermint extract, and green dye – — mix well

Pour batter into cupcake tins — cook until done – about 20 minutes. Allow to cool then decorate with green icing.

Enjoy!Makes about 20 cupcakes
