This casserole is AMAZING – I love the fact I was able to make this dish while I was watching tv — it really is chopping everything and mix – pour and bake
This is one of the easiest recipes out there BUT it is a real crowd pleaser – I really would not change anything in this recipe – feel free to add to it – if ( when) I make it again I am going to add about 1 cup of mushrooms since Eric likes them and it is SOOOO hard to get him eat veggies — does anyone else have that problem with their husbands — he will not eat veggies — I have to hid them among cheese ( or eggs)

As you can see Marie’s recipe had no seasoning — I ended up adding about 1 tsp of pepper and 2 healthy pinches of salt ( I think eggs really need salt )
I also used about 2 Tablespoons of salted butter
It is really important to thaw your hash browns and get rid of the excess water — if you do not do this when you cook you casserole there will be liquid on the bottom — not yummy at all
You can prepare this dish the night before and bake for breakfast – it is SUPER hearty so it will feed about 8 HUNGRY people

Cheesy Sausage Breakfast Casserole Recipe
Ingredients
- 10 Eggs
- 2 Cups of Cheddar Cheese - shredded
- 1 red pepper - diced
- 1 green pepper - diced
- ½ tsp of pepper
- 2 pinches of salt
- 1 Bag of Frozen Hashbrown Shredded - thawed and drain excess water
- 2 Tablespoons of Butter
- 8 Links of Sausage
Instructions
- Preheat oven to 350
- In a large skillet - melt butter - add sausage - cook - cut into small bite size pieces
- Add peppers - cook for 5 minutes
- In a large mixing bowl - add all eggs and whisk - add about ¼ cup of water
- Add pepper and salt
- Add peppers and sausage mixture
- Add potatoes to the bowl
- Add ½ Cup of Cheese
- Fold everything together
- Pour into casserole dish and add the rest of the cheese on top
- Cover and Bake for 40 minutes
- Uncover and Bake for 10 minutes
- Enjoy
