Cheddar Cheese Chicken Bites – Gluten Free

When I was young my mom would cook chicken bites using corn flake cereal. She explained to me that is how her mom would make chicken bites in the 50s – so this recipe has a special place in my heart. What I love most about this recipe is that the bites are baked not fried – they also reheat very well.

But of course I had to change it up – one of the biggest changes is the dipping sauce. When I was young we used regular mustard or ketchup for the bites – but for this recipe I wanted to show you how to make easy homemade honey mustard dipping sauce – very simple to make plus it keep in the fridge for a couple months as long as you keep it in a sealed container.

This is everything you will need – very simple ingredients.

You are going to need to preheat the oven to 350 – you will need to crunch up a box of Van’s Simply Delicious® Gluten Free Whole Grain Crackers. You will be dipping the raw chicken into egg then into the Van’s Simply Delicious® Gluten Free Whole Grain Crackers and place onto a baking tray.

Bake for about 20 minutes. While the chicken is cooking you can mix together the honey mustard dipping sauce ( hint – it is mustard and honey mixed together)

Cheddar Cheese Chicken Bites - Gluten Free

:

Ingredients

  • 2 pounds of chicken breast - chopped to bite-size pieces
  • 1 Box of Van's Simply Delicious® Gluten Free Whole Grain Crackers
  • 1 Egg
  • 1 Cup of Mustard ( Yellow or Other Kind)
  • ¼ Cup of Honey

Instructions

  1. Preheat oven to 350 - grease a baking sheet
  2. Crack the egg into a bowl and mix with a fork
  3. In another bowl place the Van's Simply Delicious® Gluten Free Whole Grain Crackers and crunch them up well
  4. Place each chicken piece into the egg then the Van's Simply Delicious® Gluten Free Whole Grain Crackers then onto the baking sheet. Once all the chicken is covered bake for 20 minutes
  5. While the chicken is baking - mix together the mustard and honey to make your honey mustard dipping sauce
  6. Serve and Enjoy
