I was recently asked by Foster Farms to share how comfort food has changed for me over the years and how I define it.  Comfort food has up until recently been associated with guilt, or splurging, or giving in to some kind of weakness, which ultimately leads to discomfort.  I don’t want to indulge only to feel guilty or unhealthy later.  But the more I thought about it the more I realized that that wasn’t happening so much anymore because my version of comfort food has evolved.  It is more emblematic of conscientious food sourcing, and freshness.  My comfort food today is food that satisfies the old definition of comfort food (aka, great taste), while nourishing my mind and body as well as my soul.  My indulgences now are the foods that give me what I need and leave me feeling great, both physically and from an ethical standpoint.

Freshness is important to me as well as simple, unaltered naturally raised food. That’s why I prefer Foster Farms Simply Raised chicken.  Chicken is my number one comfort food craving, no matter what I do with it.  I know that when I buy Foster Farms Simply Raised Chicken, I’m getting a premium ingredient that is local, fresh and raised without hormones or antibiotics on a purely vegetarian diet.  It’s also American Humane certified which is a big part of feeling comfortable with my comfort food.  It’s the perfect foundation for new comfort food meals.

My comfort food has to be healthy and so I look for fresh ingredients weekly, which means I often eat seasonal foods that reinforce the impact of those comfort foods, because I always associate certain ingredients with a different sense of wellness and completion.  In the past comfort food kind of meant bad food, for me.  It was food that had a momentary impact of making me feel good, but later I would crash and suffer the side effects.  But my interest in where food comes from and fresh ingredients has shaped my cravings to meet new criteria that is comforting in the immediacy of my indulgence, but is also sustainable, continuing to make me feel good and at my best.

I’m not alone in this.  Eric’s attitude towards comfort food has also changed.  Part of his definition of comfort food includes Foster Farms dishes I prepare like this pasta dish with fresh herbs and tomatoes.  I serve it up when he needs a recharge of mind, body, and soul, on a lazy Sunday, or at the end of a long day of work.  His preference has certainly switched from rich foods to a more healthful and mindful way of eating, and he has introduced his Dad to the positive impact of fresh, premium quality ingredients that replace and improve upon the old standard of comfort food.

Basil Chicken with Butter Sauce

:

Ingredients

  • 1 lb of Foster Farms Simply Raised Chicken
  • ½ Tsp of Salt
  • ½ Tsp of Pepper
  • ¼ Cup of Olive Oil
  • 4 Roma Tomatoes, Diced
  • ⅓ Cup of Butter, chopped
  • Fresh Basil - cut into ribbons
  • 12 oz of Pasta

Instructions

  1. Heat oil in a large skillet - add chicken and season with salt and pepper (use a little of the olive oil). Once the chicken is cooked, place on a plate.
  2. Make the pasta according to the instructions on the box
  3. In the skillet add the rest of olive oil, tomatoes, butter - cook over medium heat till the tomatoes cook down.
  4. Add in cooked pasta and chicken to the skillet - mix together - add in basil
  5. Serve
