Tomato Avocado Toast Recipe: Easy As Toast to Make

The twins are getting bigger.  They are both eating well. Lawson is picky so we have to be careful what we try to feed him so we a) don’t waste food, and b) make sure he’s getting the calories he needs.  One sure fire hit the kids love (and we love it to) is my special Tomato Avocado Toast recipe. Here’s how I make it.

How to Pit an Avocado

First, for the avocado I open one and mash it up.  You want the avocado to have a little bit of give but not be too squishy when you squeeze it in your hand.  To cut it open, place the avocado on its side and stick your knife in one Side until it hits the pit. Cut around the avocado until you have two seperate sides.  It’s best to use a chef’s knife, or a utility knife. twist the two sides at 90 degrees and pull apart easily. chop into the pit to get it stuck on the knife’s blade.  Twist and pull to remove the pit. You can scoop each side out in one piece by working the skin off of the meat with a spoon. This whole process is very quick and simple.  It’s the hardest part of my tomato avocado toast recipe.

Ingredients

  • For this tomato avocado toast recipe, you will need:
  • bread
  • 1 Avocado
  • Hummus
  • Grape Tomatoes
  • Lime Juice

Instructions

  1. To start I like to use wheat bread with a little bit more density. That way it is able to support the speed which is pretty heavy duty when it's all done. It also helps to get a good coat when there aren't to many air pockets in the bread.
  2. Put the avocado halves in a bowl and squeeze a couple tablespoons of lime juice into the bowl, Then mash until you have a semi smooth consistency. Scoop it out with a spoon and place a glob on a slice of toast. Spread the avocado in a circular motion to cover the surface of the bread. Next take a knife and spread humous over the avocado. This is a combo that really works and the kids love it. Finally I like to add some diced grape tomatoes for a little more acid and texture.
  3. In order to make it safe for Gwendolyn and Lawson, I have to cut theirs up into very small pieces, but this is one breakfast we all like to enjoy together.
