Mindful Chik’n Plant Based Protein Pomodoro Recipe

Since Eric and I now share our food with the twins at mealtimes, we make every effort to eat healthier. I do my best to cook nutritious meals for the whole family. We make short work of saving money on family dinners. I always get such a kick out of calculating the total of how much our dinner costs. It’s always about 15% of what it would cost to pick up fast food and we don’t have to sacrifice quality or healthy ingredients.

There are a few tricks to learn in order to make the best use of your kitchen time and save money. One of my favorites is stocking up on pasta when it is at a good price. I love to make my own pasta sauces, from greek recipes to Italian I enjoy adding variety to simple cheap pasta dishes at home. My favorite sauce to make is my famous Pomodoro, and I made it even better this time with Mindful Chik’n, a plant-based protein from Sweet Earth. If you haven’t noticed it, that’s because it’s new this fall. You can now find it in the fresh meat section of your local grocer.

Sweet Earth Protein

You may be familiar with the Sweet Earth Pizza I shared recently and this new plant-based protein is something I can really work with. The twins love chicken. It’s one of Gwendolyn’s favorite words. Mindful Chik’n is a delicious plant-based protein that tastes just like the real deal, so you get the nutritious benefits of 19g Protein, and 6 g Fiber without the sacrifice. The non-GMO plant-based ingredients like soy and wheat protein compare beautifully to traditional chicken with a meaty and juicy texture. The product is recipe ready and perfect for pasta as well as stir fry, salad and any other kind of dish that requires a protein.

Chicken Pomodoro

I saw this Sweet Earth Mindful Chik’n as the perfect way to bulk up my Pomodoro sauce. Since I am cooking for four now, the typical recipe size I deal with doesn’t satisfy our hunger. So I look for ways to enhance the meal and stretch it out among all of us so we can be satisfied. One way we do that is by having a salad beforehand. The Mindful Chik’n works great in a salad too, it’s an easy entree for a quick lunch break. By bulking up my pasta sauce I am able to pack each portion with more nutrients and make the meal more satisfying. Here’s how to make it:

Ingredients

  • 1.5 pints of cherry or grape tomatoes - cut into half
  • Olive Oil
  • 3 cloves of garlic, minced
  • ¼ cup of basil, shredded
  • salt and pepper
  • Mindful Chik'n

Instructions

  1. Instructions
  2. In a medium skillet heat about ¼ cup of olive oil - add garlic
  3. Stir over medium heat - over 5 minutes add tomatoes
  4. Stir for 2 minutes - cover and lower the heat a little bit. Allow tomatoes to burst.
  5. Check after 5 minutes - make sure the tomatoes have burst. There will be more liquid.
  6. Add Mindful Chik'n
  7. Add basil and salt and pepper
  8. Lower heat and cover and heat for at least 5 more minutes
  9. Now the sauce is DONE!
  10. Enjoy!
