Fresh Herb Potatoes Recipe

Ingredients

2 pounds of yukon gold potatoes – peeled and cut into quarters
Olive oil
3 Tablespoons of fresh parsley chopped
2 tablespoons of fresh Rosemary chopped
Salt
Pepper

Directions

Boil a large pot of water – add potatoes. Let them cook for about 15 minutes – you want them firm enough not to fall apart but soft enough you can cut the potato with the side of a fork.

Drain water

Drizzle olive oil on top of the potatoes

Add seasoning — give a light stir and serve.

Side Note – My husband so loves everything fried and buttered went crazy for these potatoes – there is something about simple herb potatoes is a nice change from deep fried fries — oh and they are gluten free πŸ™‚
